A good friend of mine recently came down with a touch of the flu, and didn't feel like eating. So I made her a couple of jars of my my go-to comfort food — chicken soup! Soothing and flavourful, I love making this soup and handing it out to family and friends.

We're certainly in the midst of needing some comfort — post holidays blahs and that wicked, wicked cold that seems to have gripped the continent.

Here's a selection of soups perfect for supper, with leftovers true lifesavers for the next day!

Fast and Furious Chicken Tortellini Soup

This is my go-to chicken soup recipe — it's quick, easy, and uses whatever vegetable you fancy. It calls for a store-bought rotisserie chicken, but, if you want to go meatless, add a can of beans (rinsed) to the soup five minutes before serving.

1 Tbsp. (15ml) olive oil

1/2 small onion, finely chopped

2 tsp. (10ml) dried basil

2-3 Tbsp. (30-45ml) fresh chopped parsley
