One of the fun things about food, is the unlikely combinations that often get put together.

Take chocolate and chili as one odd combo or how about peanut butter and onion? My mother used to enjoy the latter in a sandwich.

Another unusual partnership is tomatoes and strawberries.

I’ll never forget the first time I was served a salad with these two ingredients and immediately thinking I was not going to like it. I was pleasantly surprised.

The following salad combines local strawberries and grape tomatoes along with greens and herbs. The dressing is simply olive oil and balsamic vinegar. Balsamic is such a great ingredient with both tomatoes and strawberries.

On the topic of unusual pairings, the next time you want a super-easy dessert, drizzle halved strawberries with good quality balsamic vinegar and sprinkle a bit of freshly cracked pepper over top!

Tomato and Strawberry Salad

Ingredients:

  • 3 cups (750 ml) of grape tomatoes halved
  • 2 cups (500 ml) of strawberries, hulled and halved
  • 1 cup (250 ml) of baby arugula (optional)
  • 1 cup (250 ml) of baby bocconcini
  • 1/4 c. (50 ml) chopped flat leaf parsley
  • 2 tbsp. (25 ml) chopped chives
  • 2 tbsp. (25 ml) chopped fresh basil
  • 1/4 c. (50 ml) sliced or slivered almonds

Dressing:

  • 1/4 tsp. (1 ml) salt
  • 1-1/2 tbsp. (23 ml) balsamic vinegar
  • 2 tbsp. extra virgin olive oil
  • pepper to taste

Directions:

1. In a large bowl, combine the tomatoes, strawberries, arugula (if using) baby bocconcini, parsley, chives, basil and almonds. Set aside.

2. Make the dressing by combining the salt and vinegar in a small bowl. Whisk until the salt is dissolved. Whisk in the olive oil. Season with pepper to taste.

3. Drizzle the dressing over the salad. Toss gently and serve immediately.

(Serves 6)

Options:

- use baby pea shoots in place of the arugula

- use shavings of parmesan in place of the bocconcini
