Salmon continues to be one of the most popular and available fish at the fish counter.
It marries well with a wide variety of other ingredients, cooking methods are flexible and the cooking time is quick. It’s little wonder it’s so appealing.
Salmon is also a particularly good fish to cook on an outdoor grill. Its medium-firm texture stands up well to this type of robust cooking.
One of my favourite flavour combinations with any fish is lemon.
This week I’m featuring a recipe for salmon skewers. The salmon is dressed lightly in olive oil and lemon zest before being put on skewers and grilled. It is served with a lemon dill aioli. Aioli is basically a garlic mayonnaise. The addition of dill and lemon to it is a perfect match for the salmon.
The skewers can be served on top of a salad or a bed of couscous or orzo. The salmon is also delicious, chilled.
Salmon Skewers With a Lemon Dill Aioli
(Serves 4-6)
2 lbs. (1 kg) boneless skinless salmon
1 tbsp. (15 ml) olive oil
2 tsp. (10 ml) lemon zest
1/2 tsp. (2 ml) salt
1/4 tsp. (1 ml) pepper
1. Cut salmon into 1 - 1/2 inch cubes and place in a bowl.
2. In a small bowl, combine the olive oil, lemon zest, salt and pepper. Pour over the salmon and gently combine so that all the salmon is coated.
3. Divide salmon between four or six metal skewers.
4. Preheat an outdoor grill. Carefully oil the grill.
5. Cook the salmon skewers for about 8 - 10 minutes, turning several times so that all surfaces of the fish get grilled.
6. Serve with the lemon dill aioli
Lemon Dill Aioli
1 cup (250 ml) of good quality mayonnaise
zest and juice of 1 medium lemon
1 clove garlic minced
1 tbsp. (15 ml) chopped fresh dill
1. Combine all ingredients in a bowl. Adjust seasoning to taste with salt and pepper if desired. (Note can be made several hours ahead and refrigerated).
